Laundry Lobster Salad with Satur Farm Heirloom Tomatoes

2 -2# poached or grilled lobster meat
3# assorted heirloom tomatoes
1# Haircot Vert
1 small red onion, peeled, halved lengthwise, and slivered
5tbs. coarsley chopped flat leaf parsley
5tbs. julienne of basil
Kernels from 4 ears of boiled corn
2 tbs. julienne of lemon confit
2-½ tbs. lemon juice
Freshly ground white pepper to taste
Fleur de Sel to taste
1cup extra virgin olive oil

- Use only the best local farm stand tomatoes available.
- Cut the tomatoes into different shapes (thin, wedges, dice, halves); place in a bowl.
- Combine with the onion, parsley, basil, corn, lemon confit, lemon juice, olive oil, sea salt and pepper. Mix throughly, add lobster just before serving.
